Quick Mix Chocolate Cake
1 ½ c. Quick Mix
¼ c. Cocoa
¾ c. Sugar
2/3 c. Milk
1 Egg
½ t. Vanilla
1.Add cocoa to the sugar and stir into the Quick Mix.
2.In another bowl, combine milk, eggs and vanilla.
3.Stir half of the liquid into the Mix and beat two minutes with wire whisk, or use electric mixer for the same length of time at low speed.
4.Scrape bowl occasionally.
5.Add the remaining liquid and beat two minutes.
6.Bake in pans lined with waxed paper in a moderate oven (375 degrees) about 25 minutes.
*Chocolate cake batter can be baked in a waffle iron and served cold with ice cream or whipped cream.
Yield : one 9-inch layer
