Muffin Tin Breakfast
6 slices ham (or 12 slices if using real thin slices, place 2 in each cup)
6 eggs
salt and pepper
Batch of muffins to make 6 (from muffin mix or regular recipe)
1. Preheat oven to 375F.
2.Line 6 muffin tin cups with ham slices.
3.Break an egg into each ham slice.
4.Line 6 more muffin tin cups with paper liners.
5.Fill each 2/3 full with muffin batter.
6.Bake for 15-20 minutes or until eggs are cooked and muffins are golden brown.
Tips: You may want to spray the muffin tin cups before placing the ham slices in them.
The ham is usually pretty salty, so you may not want to add salt to the egg.
Also, to be a bit healthier you could use turkey ham.
