Breakfast Burrito
- 1 piece of bacon per person
- 1 egg per person
- 2 T. refried beans per person
- 2-3 T. shredded Cheddar cheese per person
- 1 (10 inch) flour tortilla per person
- Salsa (optional)
1. Place bacon in a large, deep skillet; cook over medium high heat until evenly brown. Drain, and set aside.
2. Wrap the tortillas in foil and warm in the oven.
3. Fry the eggs in a greased skillet until firm.
4. In a small sauce pan heat the refried beans.
5. Top each tortilla with refried beans, 2 strips of bacon, 1 egg and a little cheese.
6. Roll tortillas into burritos and serve.
