Apple Pancakes
2 cups flour
2 Tablespoons sugar
4 teaspoons baking powder
1 teaspoon salt
2 egg yolks, well beaten
2 cups milk
2 Tablespoons butter, melted
1 cup apple, finely chopped
2 eggs whites, stiffly beaten

- Sift together the first four ingredients
- In another bowl, combine egg yolks and milk.
- Pour liquid mixture into the bowl of dry ingredients; stir well.
- Stir in butter and apple.
- Fold in egg whites; let stand 2 minutes.
- Bake on a hot griddle using 1/3 cup batter for each.
- Dot with butter; sprinkle with powdered sugar; roll up.
