Basic Muffins
1 egg, well beaten
½ cup milk
¼ cup oil
1 ½ cups flour
½ cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1. Preheat oven to 400 ° F.
2. In the largest mixing bowl, stir together the flour, sugar, baking powder, and salt.
3. In another bowl, combine egg, milk and oil; mix well with a wire whisk.
4. Make a well in the center of the dry ingredients. Pour liquid ingredients into the flour mixture; stir together quickly with a fork, just until dry ingredients are moistened. The mixture will still be lumpy.
5. Spoon into paper lined muffin cups, filling each cup about 2/3 full.
6. Bake until golden brown, about 20-25 minutes.
7. Immediately remove from pan.
Makes 8-12 muffins.
