Thumbprint Cookies
¼ cup packed brown sugar
¼ cup shortening
¼ cup margarine, softened
1 egg, separated
½ teaspoon vanilla
1 cup flour
¼ teaspoon salt
¾ cup finely chopped nuts (optional)
Jelly or Chocolate Kisses
1. Preheat oven to 350 degrees F.
2. Cream brown sugar, shortening, margarine, egg yolk, vanilla and salt.
3. Stir in flour.
4. Shape dough into 1- inch balls.
5. Beat egg white slightly.
6. Dip each ball into egg white.
7. Place about 1 inch apart on ungreased baking sheet.
8. Press thumb deeply in center of each cookie.
9. Bake until light brown, 8-10 minutes.
10. Immediately remove from baking sheet; cool.
11. Fill thumbprints with jelly, or place a chocolate kiss in each.
Makes about 3 dozen cookies.
