Flour Tortillas
2-3 cups flour
½ teaspoon baking powder
¼ teaspoon salt
2 teaspoons shortening
1 cup water
1. Place flour in a mixing bowl.
2. Sift in baking powder and salt.
3. Cut-in the shortening, using a fork, until it resembles a course meal.
4. Slowly add the water.
5. Knead all ingredients together until it forms a soft dough.
6. Separate into biscuit sized pieces.
7. Roll out in flour or between 2 pieces of wax paper (or use a tortilla press, if you have one).
8. Place tortilla on a hot, ungreased skillet; cook until edges begin to dry and tortilla is lightly browned.
9. Turn; cook until surface is puffy.
10. Stack tortillas in a napkin-lined basket to keep warm.
