Our Best Biscuits
2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon sugar
½ teaspoon salt
¼ cup shortening
¾ cup milk
1. Heat oven to 425°. Adjust oven rack to center position.
2. Sift dry ingredients into a large bowl (this means the flour, baking powder, sugar, and salt).
3. Cut-in shortening until mixture is evenly mixed and crumbly.
4. Make a well in center of dry ingredients; pour in most of the milk (stop adding milk if the dough starts to be sticky).
5. Gently stir dry ingredients with the milk, just until mixture is clumping together (it will be puffy and moist). If necessary, add a few more teaspoons of milk.
6. Flour your hands a bit, pat dough into a thick square, and then squeeze together. Knead 5 or 6 times so biscuits will rise evenly.
7. Pat dough out to a square 1 inch thick. Cut with a 2-inch cutter.
8. Bake for about 10 to 12 minutes or until golden brown.
Makes 10 to 12 biscuits.
